Strawberry Cheesecake Stuffed Donuts

Strawberry Cheesecake Stuffed Donuts

Ingredients:
1 can of refrigerated biscuit dough (8 biscuits)
1 cup cream cheese (softened)
1/2 cup powdered sugar
1/4 cup strawberry jam
1/2 teaspoon vanilla extract
1 cup fresh strawberries (finely diced)
Oil for frying (vegetable or canola oil)
1 cup granulated sugar (for coating)

Directions:
Prepare the Cheesecake Filling:
In a medium bowl, beat together the softened cream cheese, powdered sugar, strawberry jam, and vanilla extract until smooth and creamy.
Fold in the finely diced strawberries.
Transfer the filling to a piping bag with a large round tip, or use a plastic bag and snip off the corner.
Fry the Donuts:
In a large, deep skillet or pot, heat about 2-3 inches of oil over medium heat until it reaches 350°F (175°C).
Separate the biscuit dough pieces and slightly flatten each one.
Gently drop the biscuits into the hot oil, frying in batches of 2-3 donuts at a time to avoid overcrowding.
Fry each side for about 1-2 minutes, or until golden brown.
Remove from the oil and drain on a paper towel-lined plate.
Coat the Donuts:
While the donuts are still warm, roll them in granulated sugar, making sure to coat each side evenly.
Fill the Donuts:
Once the donuts have cooled enough to handle but are still slightly warm, use a small knife to make a hole in the side of each donut.
Pipe the strawberry cheesecake filling into each donut until they feel full but not bursting.
Serve:
Place the stuffed donuts on a serving platter and garnish with a light dusting of powdered sugar or extra strawberry slices if desired.
