Ingredients:
4 ripe Roma tomatoes, diced
1/2 medium red onion, finely chopped
1-2 jalapeño peppers, seeded and finely chopped (use more or less for desired heat)
1/4 cup fresh cilantro, chopped
Juice of 1 lime (about 2 tablespoons)
Salt, to taste (about 1/2 teaspoon)
Optional: 1 clove garlic, minced

Instructions:
Combine the ingredients: In a medium bowl, mix the diced tomatoes, chopped onion, jalapeño, cilantro, and garlic (if using).
Add lime juice and salt: Squeeze the fresh lime juice over the mixture and sprinkle with salt. Stir to combine.
Taste and adjust: Adjust the seasoning with more salt or lime juice if needed. For a spicier pico de gallo, add more jalapeño or leave some of the seeds.
Let it sit: For the best flavor, let the pico de gallo sit for at least 15-20 minutes before serving to allow the flavors to meld.
Serve: Enjoy it as a dip with tortilla chips or as a fresh topping for tacos, burritos, grilled chicken, or fish.
