Broccoli Cheese Patties
Ingredients:
2 cups fresh broccoli florets, finely chopped
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup bread crumbs (panko or regular)
2 large eggs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon olive oil (for cooking)
Directions:
Prepare the Broccoli:
Steam or blanch the broccoli florets until they are tender, about 5 minutes.
Drain and finely chop the broccoli, then set aside to cool slightly.
Mix the Ingredients:
In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, bread crumbs, eggs, garlic powder, onion powder, black pepper, and salt.
Mix until all ingredients are well incorporated and the mixture holds together when pressed.
Form the Patties:
Using your hands, shape the mixture into small patties, about 2-3 inches in diameter and 1/2 inch thick.
Place the formed patties on a plate or baking sheet.
Cook the Patties:
Heat the olive oil in a large skillet over medium heat.
Once the oil is hot, add the patties in a single layer, being careful not to overcrowd the skillet.
Cook the patties for 3-4 minutes on each side, or until they are golden brown and crispy.
Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

Serve the Broccoli Cheese Patties warm, garnished with a sprinkle of additional Parmesan cheese or fresh herbs if desired.
