Ingredients:
2 cups grated raw potatoes
1 cup mashed potatoes (leftover mashed potatoes work well)
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup milk (more if needed)
2 tablespoons melted butter (optional, for added richness)
2 tablespoons vegetable oil or butter (for frying)
Directions:
Prepare the Potatoes:
Grate the raw potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and wring out as much excess moisture as possible.
In a large mixing bowl, combine the grated raw potatoes and the mashed potatoes, mixing until well combined.
Mix the Batter:
In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.
Gradually add the dry ingredients to the potato mixture, stirring to combine.
Pour in the milk and melted butter (if using), stirring until you have a thick batter. If the mixture is too thick, add a little more milk to reach the desired consistency.
Cook the Boxty:
Heat the vegetable oil or butter in a large skillet or griddle over medium heat.
Drop heaping spoonfuls of the potato batter onto the hot skillet, flattening each spoonful into a round pancake shape.
Cook for 3-4 minutes on each side, or until the boxty is golden brown and crispy on the outside and cooked through on the inside.
Remove the cooked boxty from the skillet and place them on a paper towel-lined plate to drain any excess oil.
Serve:
Serve the boxty hot, either as a savory side dish or as the main component of a meal.
Serving Suggestions:
Traditionally, boxty can be served with a dollop of sour cream, chives, or a side of smoked salmon or bacon. It also pairs well with a fried egg for a hearty breakfast.
