Zucchini Garlic Bites
Ingredients:
1 large zucchini, grated
1/2 teaspoon salt
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg, lightly beaten
2 cloves garlic, minced
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes (optional)
1/4 cup shredded mozzarella cheese
1 tablespoon fresh parsley, chopped (optional)

Directions:
Prepare the Zucchini:
Grate the zucchini and place it in a colander. Sprinkle with 1/2 teaspoon of salt and toss to combine. Let it sit for about 10 minutes to draw out excess moisture.
After 10 minutes, squeeze the zucchini to remove as much water as possible. You can use a clean kitchen towel or paper towels to help with this process.
Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil spray.
Mix the Ingredients:
In a large mixing bowl, combine the squeezed zucchini, breadcrumbs, grated Parmesan cheese, beaten egg, minced garlic, black pepper, dried oregano, dried basil, and crushed red pepper flakes (if using). Mix well to combine.
Fold in the shredded mozzarella cheese and chopped parsley.
Form the Bites:
Take about 1 tablespoon of the mixture and shape it into a small ball. Place it on the prepared baking sheet.
Repeat with the remaining mixture, spacing the bites about 1 inch apart.
Bake:
Lightly spray the tops of the zucchini bites with olive oil spray.
Bake in the preheated oven for 15-20 minutes, or until the bites are golden brown and firm to the touch.
Serve:
Serve the zucchini garlic bites warm, with your favorite dipping sauce, such as marinara, ranch, or a garlic aioli.
