Ingredients:
For the Sweet Potato Mixture:
4 cups mashed sweet potatoes (about 4-5 medium sweet potatoes)
1 cup granulated sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs, beaten
1/2 cup unsalted butter, melted
For the Pecan Streusel Topping:
1 cup light brown sugar, packed
1/3 cup all-purpose flour
1 cup chopped pecans
1/3 cup unsalted butter, melted
Instructions:
Prepare the Sweet Potatoes:
Preheat your oven to 350°F (175°C). Peel and boil the sweet potatoes until tender. Drain and mash them in a large bowl.
Make the Sweet Potato Mixture:
Add the granulated sugar, salt, vanilla extract, beaten eggs, and melted butter to the mashed sweet potatoes. Mix until well combined.
Prepare the Baking Dish:
Transfer the sweet potato mixture to a greased 9×13-inch baking dish and spread it evenly.
Make the Pecan Streusel Topping:
