Sweet Chili Pineapple Sauce Recipe
Ingredients:
1 cup pineapple juice
1/2 cup crushed pineapple (canned or fresh)
1/4 cup rice vinegar
1/4 cup water
1/2 cup sugar
2 tablespoons honey
2 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1-2 teaspoons red chili flakes (adjust to taste)
2 tablespoons cornstarch
2 tablespoons water (for cornstarch slurry)
Instructions:
Combine Ingredients:
In a medium saucepan, combine the pineapple juice, crushed pineapple, rice vinegar, water, sugar, honey, soy sauce, minced garlic, grated ginger, and red chili flakes.
Simmer the Sauce:
Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, until the sugar is dissolved and the flavors meld together.
Thicken the Sauce:
In a small bowl, mix the cornstarch and 2 tablespoons of water to create a slurry. Slowly pour the slurry into the simmering sauce, stirring constantly.
Continue Cooking:
Continue to cook the sauce over low heat for another 2-3 minutes, or until the sauce has thickened to your desired consistency.
Cool and Store:
Remove the saucepan from the heat and let the sauce cool to room temperature. Transfer the sauce to a jar or airtight container and refrigerate until ready to use.
Serve:
Use this Sweet Chili Pineapple Sauce as a dipping sauce for spring rolls, chicken tenders, or shrimp. It also works great as a glaze for grilled meats or as a marinade for chicken, pork, or tofu.
