Throw Together Mexican Casserole
Ingredients:
1 lb ground beef (or ground turkey)
1 packet taco seasoning mix
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies (Rotel)
1 can (10 oz) enchilada sauce
2 cups shredded Mexican blend cheese
1 cup sour cream
1 bag (8 oz) tortilla chips, crushed
1 small onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 teaspoon cumin
1/2 teaspoon chili powder
Fresh cilantro, chopped (optional, for garnish)
Sliced jalapeños (optional, for garnish)
Sliced avocado (optional, for serving)
Directions:
Preheat and Prepare:
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish and set it aside.
Cook the Ground Beef:
In a large skillet over medium heat, add the ground beef, onion, and bell pepper. Cook until the beef is browned and the vegetables are softened, about 7-10 minutes.
Drain any excess fat from the skillet.
Season the Mixture:
Add the minced garlic, taco seasoning, cumin, and chili powder to the skillet. Cook for an additional 1-2 minutes until fragrant.
Combine Ingredients:
Stir in the black beans, corn, diced tomatoes with green chilies, and enchilada sauce. Mix until well combined and heated through.
Assemble the Casserole:
In the prepared baking dish, layer half of the crushed tortilla chips, followed by half of the beef mixture.
Spread half of the sour cream over the beef mixture, then sprinkle with 1 cup of shredded cheese.
Repeat the layers with the remaining chips, beef mixture, sour cream, and shredded cheese.
Bake:
Cover the casserole with foil and bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve:
Remove the casserole from the oven and let it sit for a few minutes before serving.
Garnish with fresh cilantro, sliced jalapeños, and avocado if desired.
