Crock Pot Huli Huli Chicken Recipe

Ingredients:
4-6 boneless, skinless chicken thighs
1/2 cup ketchup
1/2 cup soy sauce
1/2 cup brown sugar
1/4 cup pineapple juice
1/4 cup rice vinegar
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/4 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch
1 tablespoon water
Sliced green onions (for garnish)
Sesame seeds (for garnish)
Pineapple slices (optional, for serving)

Instructions:
Prepare the Sauce:
In a medium bowl, whisk together the ketchup, soy sauce, brown sugar, pineapple juice, rice vinegar, minced garlic, minced ginger, and red pepper flakes (if using).
Add Chicken to Crock Pot:
Place the chicken thighs in the bottom of the crock pot. Pour the prepared sauce over the chicken, ensuring all pieces are well-coated.
Cook:
Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
Thicken the Sauce:
Once the chicken is cooked, remove it from the crock pot and set aside.
In a small bowl, mix the cornstarch with water to create a slurry. Add the slurry to the sauce in the crock pot and stir well. Cover and cook on high for an additional 15-20 minutes, or until the sauce has thickened.
Serve:
Return the chicken to the crock pot and coat with the thickened sauce.
Garnish with sliced green onions and sesame seeds. Serve with pineapple slices if desired.
