🛒 Ingredients

Shrimp Filling

  • 2 tbsp neutral oil (avocado or canola)

  • 1 medium onion, diced

  • 1 bell pepper, sliced (any color)

  • 1 lb shrimp, peeled & deveined

  • 3 cloves garlic, minced

  • 1 tsp chili powder

  • 1 tsp paprika

  • ½ tsp cumin

  • ½ tsp onion powder

  • ¼ tsp salt (more to taste)

  • ¼ tsp black pepper

  • Juice of ½ lime

For Assembling

  • 4 large flour tortillas

  • 1 ½–2 cups shredded cheese (Mexican blend, Monterey Jack, or mozzarella)

  • 1 tbsp butter or extra oil for the skillet

Optional Toppings

  • Sour cream

  • Salsa or pico de gallo

  • Guacamole

  • Fresh cilantro

  • Extra lime wedges

1. Prep the Shrimp

Pat the shrimp dry with paper towels. This helps them sear instead of steaming. Season lightly with a pinch of salt and pepper.


2. Sauté the Onions & Peppers

Heat 2 tbsp oil in a skillet over medium heat. Add the diced onion and sliced bell pepper. Cook 4–5 minutes until softened and lightly browned.


3. Add Garlic & Shrimp

Stir in the minced garlic and cook for 30 seconds. Add the shrimp and cook for 1–2 minutes per side until pink and opaque.


4. Season the Filling

Sprinkle in the chili powder, paprika, cumin, onion powder, salt, and pepper. Toss to coat everything evenly.
Finish with a squeeze of lime juice to brighten the flavors.


5. Remove from Heat & Chop (Optional)

If you prefer smaller pieces inside the quesadilla, roughly chop the shrimp mixture. Otherwise, leave them whole for a chunkier bite.


6. Assemble the Quesadillas

Wipe the skillet clean. Add a little butter or oil.
Place a tortilla down, sprinkle cheese over half, spoon shrimp mixture on top, add more cheese, then fold the tortilla closed.


7. Toast Until Golden & Melty

Cook the quesadilla 2–3 minutes per side until crisp, golden, and the cheese is fully melted.
Repeat with remaining tortillas.
