🛒 Ingredients

For the Rice Base

  • 220 g cooked short-grain brown rice

  • 30 ml rice vinegar

  • 1 teaspoon sugar (optional)

  • Pinch of salt

Fresh Layer

  • 130 g cucumber, diced

  • 5 g fresh chives, finely chopped

Creamy Avocado

  • 120 g avocado, mashed

  • ½ teaspoon lemon or lime juice

  • Pinch of salt

Spicy Shrimp Layer

  • 200 g cooked shrimp, chopped

  • 2 tablespoons mayonnaise

  • 1 tablespoon sriracha (more or less to taste)

  • 1 teaspoon soy sauce

Optional Garnishes

  • Sesame seeds

  • Extra sriracha

  • Chopped chives

  • Seaweed flakes (furikake)

🔪 7-Step Directions

1. Prepare the Rice Base

In a small bowl, mix the warm cooked brown rice with rice vinegar, optional sugar, and a pinch of salt. Stir well and let it cool completely — cool rice stacks much better and holds its shape.

2. Prep the Cucumber Layer

Dice the cucumber into small, even cubes. Pat dry with a paper towel to remove excess moisture, then toss lightly with chopped chives. This keeps the layer crisp and fresh.

3. Make the Creamy Avocado Layer

Mash the avocado with lime or lemon juice and a pinch of salt until smooth. The citrus prevents browning and adds brightness to the stack.

4. Mix the Spicy Shrimp

Chop the cooked shrimp into small pieces. In a bowl, mix shrimp with mayonnaise, sriracha, and soy sauce. Adjust heat level by adding more or less sriracha. The mixture should be creamy, spicy, and scoopable.

5. Set Up Your Stacking Mold

Use a round food ring, small mason jar, or a clean measuring cup lined with plastic wrap. This helps create the perfect layered look when unmolded.

6. Assemble the Layers

Layer the ingredients in this order, pressing gently after each addition:

  1. Rice mixture (bottom layer)

  2. Cucumber + chives

  3. Creamy avocado

  4. Spicy shrimp mixture

Press lightly to help the stack hold together but avoid squishing the layers too much.

7. Unmold & Garnish

Carefully lift the mold straight up to reveal your beautiful sushi-style stack. Sprinkle with sesame seeds, extra chives, seaweed flakes, or a drizzle of sriracha for that restaurant-style finish.
