If you love a good grilled cheese and a hearty breakfast sandwich, this recipe brings both worlds together! These Breakfast Grilled Cheese Eggs are loaded with soft, buttery scrambled eggs, savory breakfast sausage, and melty Colby-Jack cheese between crispy golden bread.

🛒 Ingredients

  • 1/2 pound ground breakfast sausage

  • 6 large eggs, beaten

  • 8 slices Colby-Jack cheese

  • 8 slices bread (white, brioche, or sourdough)

  • 2 tablespoons butter, softened

  • Salt & black pepper, to taste

  • 1 tablespoon milk or cream (optional, for fluffier eggs)

1. Cook the breakfast sausage

In a skillet over medium heat, cook the ground breakfast sausage until browned and fully cooked, breaking it up into crumbles. Drain excess grease and set aside.

2. Prepare the eggs

In a bowl, whisk the beaten eggs with a pinch of salt, pepper, and the milk/cream if using. This keeps the eggs fluffy and soft.

3. Scramble the eggs

Pour the egg mixture into the skillet over medium-low heat. Gently push the eggs from the edges toward the center until soft and creamy. Don’t overcook — they’ll continue cooking in the sandwich. Remove from heat.

4. Prep the bread

Butter one side of each bread slice. These buttered sides will be the outside of the grilled cheese, helping them crisp beautifully.

5. Build the sandwiches

On the unbuttered side of a slice, add 1 slice of Colby-Jack cheese, a generous scoop of scrambled eggs, a handful of cooked sausage crumbles, then another slice of cheese.
Top with another bread slice, buttered side facing out.
Repeat to make 4 sandwiches total.

6. Grill the sandwiches
