2 lbs small potatoes, cubed

1 lb ground beef

6 slices bacon, chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp black pepper

1/2 cup ketchup

1/4 cup mustard

1/4 cup pickles, chopped (optional)

2 cups shredded cheddar cheese

2 green onions, sliced, for garnish
Directions
1. Prep and cook the potatoes
Heat olive oil in a large skillet over medium heat. Add the cubed potatoes and season with salt, pepper, and smoked paprika. Cook for 15–20 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender inside. Remove from the skillet and set aside.
2. Cook the bacon
In the same skillet, add the chopped bacon. Cook until crispy, about 5–7 minutes. Remove the bacon and place on paper towels to drain excess grease.
3. Brown the beef
Add the ground beef to the skillet with a pinch of salt and pepper. Cook over medium heat until fully browned, breaking it up with a spatula. Drain any excess grease.
4. Sauté onions and garlic
Add the chopped onion and minced garlic to the beef. Sauté for 2–3 minutes until fragrant and softened. This builds a rich base flavor for your skillet.
5. Combine ingredients
Return the cooked potatoes and bacon to the skillet with the beef mixture. Stir in ketchup, mustard, and pickles (if using). Mix well so every bite gets that classic cheeseburger flavor.
6. Add the cheese
Sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet with a lid for 2–3 minutes to let the cheese melt perfectly. For an extra golden top, you can place the skillet under a broiler for 1–2 minutes.
7. Garnish and serve
