☕ Coffee & Chocolate Layer Cake ☕

 

🧁 Ingredients

For the cake:

  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 2 tbsp instant coffee (dissolved in the warm milk)
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • A pinch of salt

For the filling:

  • 1 cup whipping cream
  • 100g melted dark chocolate
  • 1/2 cup cream cheese (optional)

For decoration:

  • Whipped cream
  • Chocolate sauce
  • Coffee beans or chocolate pieces
  • Cocoa powder for dusting

👩‍🍳 Preparation

To make the cake:

  1. Beat the sugar, oil, eggs, and vanilla until smooth.
  2. Add the coffee dissolved in warm milk.
  3. In another bowl, sift together the flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing well.
  5. Pour the batter into a square pan and bake in a preheated oven at 180°C (356°F) for 25–30 minutes.
  6. Let the cake cool completely, then cut it into 2 or 3 layers.

To make the filling:

  1. Whip the cream until stiff peaks form.
  2. Add the melted chocolate and cream cheese, then mix until well combined.

To assemble:

  1. Place a layer of cake, then spread a layer of filling. Repeat with the remaining layers.
  2. Cover the top with chocolate sauce.

To decorate:

  • Pipe whipped cream on top, dust with cocoa powder, and garnish with coffee beans or chocolate pieces.
